The Real Reason Flu Hits In Winter And How To Stop It Naturally

For decades we’ve heard the myth that flu strikes in winter because of the colder weather. But numerous studies have all debunked that theory. Studies have shown that flu hits the tropics in their “winter” when it’s still quite warm (usually during the rainy season).
No, there’s another reason flu hits in winter. And it gives you an easy way to stop the flu before it hits. And it doesn’t involve getting a flu shot.
We already know that our bodies produce a lot less vitamin D during the winter. But is it possible the reduced vitamin D levels in winter contribute to the flu?
The evidence is there. Years ago, an observant British general practitioner, R. Edgar Hope-Simpson, connected influenza epidemics in the northern hemisphere with winter solstice. So, flu hits right when vitamin D levels begin to plummet. Conventional medicine has largely ignored his work, until now.
Just this year, two major medical journals released a report written by Dr. John Cannell, a California psychiatrist at the Atascadero State Hospital in California. This is a maximum security facility for the criminally insane. In his report, Dr. Cannell noted that wards all around his got hit hard with a severe flu-like outbreak in April 2005. None of his 32 patients caught the flu ―even after they mingled with infected inmates from other wards.
Dr. Cannell wondered why his ward avoided the flu when it hit all the others. He soon realized it was the high doses of vitamin D he prescribed to all the men on his ward. He had found that his patients, like most other people in the industrial world, had a deficiency. (He must be one of the very few psychiatrists that pay attention to nutrition!) His efforts to correct the deficiency boosted their immune system and completely protected them from the flu.
Why does it work? Science recently discovered that vitamin D stimulates your white blood cells to make a substance called cathelicidin. Researchers haven’t studied this chemical on the flu virus yet, but they have previously reported that it attacks a wide variety of pathogens. These include fungi, viruses, bacteria, and even tuberculosis.
So, it turns out that my suggestions for you to have your vitamin D levels checked this time of year were right on target. But now, armed with this new information, I don’t even think it’s necessary to spend the money on a test. Vitamin D is cheap. And it stimulates your body to make what might be the ultimate antibiotic! One with no toxicity at all and only kills those organisms invading you (not your own cells).
Arm yourself with the incredible protection of vitamin D. Get sunlight when you can. Just be sure not to burn. If you are mostly indoors, I strongly suggest that you add vitamin D to your daily regimen. I recommend 5,000 IU per day. I see no downside to this dose, especially in the winter months!

Case of the Month: Hyperthyroidism
This month I’ve had no less than six hyperthyroid cases. Two cases involved genetic predisposition and/or environmental exposure to something bad, one girl had a history of a whiplash, another had a head trauma due to a car accident, one was due to electromagnetic fields and now this current case discussed below associated with stress and post-partum issues. Geez! What on earth is happening? I’m not even an endocrinologist plus I only see a maximum of four clients each day. Sounds like God is trying to tell me something.
Oh yeah. . .case of the month time!
This latest case was a woman who called last week complaining of migraine headaches, pain behind her right eye, and weakness so severe she couldn’t even pick up and hold her new baby. Her thyroid gland was visibly enlarged on one side, she had heart palpitations, tachycardia and low blood pressure with a widened spread (90/60 when the normal pressure is 120/80).
Her doctor wanted to give her radioactive iodine to permanently kill her thyroid gland the next day. She, of course, would be on thyroid medications the rest of her life (she was only 34 years old). On top of that, she was attempting to nurse. If she chose the radioactive iodine treatment, she could not hold or nurse her own baby for up to two weeks due to the radioactivity she would be giving off. (A babies DNA is pretty fragile. Who would want to chance genetic DNA damage in their baby?) These “real drugs” did not sound like a viable option for her at this time, so she was seeking alternatives. Can you imagine? I couldn’t. What she did have going for her was that her husband was a gem and completely supportive in every way. . . but very worried.
One of my first questions to her was, “What kind of stress did you have four months ago that may have triggered this immune response which is hurting your thyroid gland?”
Good question. Included in the answer was a move to a new state, a lawsuit over the new house, family problems, close friends being taken advantage of financially, both of them looking for jobs in an economically tight area, and a new baby.
Now I don’t know about you, but any one of those situations would stress me out let alone the whole bunch of them.
“You can always opt for the real drugs if the natural stuff doesn’t work.” I told her. “Why not give it a month or two and see what we can do? Your heart rate is high, but not unmanageable. Your energy level worries me a bit, but if we work together and you let me know if things change for the worse, I think we can make this work for you.” She agreed. We discussed ways to minimize or eliminate stress in her environment as her life force was quite low.
I also found for her (and a couple of other hyperthyroid women this month) the need for Standard Process Lab’s Pituitrophin PMG. This protomorphogen is used for cases where lots of different hormone systems seem to be malfunctioning. If the pituitary gland isn’t working right, there is adrenal stress, reproductive stress, pineal stress (sleep disorders) and thyroid dysfunction. I sent her home on that, gave her instructions to move her bed away from the electromagnetic source (an electrical panel was in the area of the head of the bed and they had just moved the bed to that area within the last four months.) We also found that she had four energy vortexes not supportive of life in her new home. I gave her a recommendation for an energy moving exorcist, got her reconnected as best as I could to her Life Purpose by instructing her to do something she was totally passionate about every day (she chose dancing) and sent her home with one of Danette’s thyroid flax bags. Hmm. . .I wondered if her earlier alien encounter and the ghost in her house were influencing her disease in any way? I didn’t think so, but I also didn’t think that her doctor knew all she needed to know about this particular case. Do we tell her about all this weird stuff I was thinking? Not!. . .I’m sure we’d both end up being the laughing stock of the town!
There seems to be a lot of press out there recently on the use of Bugleweed for hyperthyroidism, but not one of the cases I have seen seemed to need it. I put her on motherwort instead, which is great for post-partum thyroid cases where the heart rate is up and there are palpitations. Motherwort also increases milk production and she could use a bit of that.
She called to thank me on Christmas day. With only two weeks into the program, she was strong enough to lift her baby up, her heart rate had gone down, her period had started (she had not had one for four months) and she felt that she was on the road to recovery and thanking me for her miracle.
The woman who came to work on the energy of the house found the same trouble areas as I had found with dowsing a diagram of their home and apparently repaired the energy disruptions. They still have a ghost in the house, but he’s not doing any damage and they are used to him now. She’s a happy camper and I’m so grateful that she did what the Guides suggested.
So, what are the Symptoms of Hyperthyroidism?

Atrial fibrillation, Bipolar depression, Diarrhea, Eye pain, Eyelid retraction (bulging eyes), Frequent bowel movements, Goiter (enlarged thyroid), Increased activity, Increased appetite w/ weight loss, Increased vocalization (cats), Nervousness, Palpitations, Photophobia (sensitive to light), Sensitivity to heat, Tachycardia (rapid heart beat), Tremors, Warm/moist skin, and Widened pulse pressure (normal 120/80)
Each hyperthyroid case needs its own evaluation to see what kind of a program would be best. Sometimes we have to modify the program depending on the types of medications the person may already be on. I do advocate radioactive iodine for cats as this seems to be the best treatment for that species. Some cases need some Spiritual counseling, others a goitrogen diet, and as in this case—a movement of energetic vortexes from the house.
I chose this case as an example because it had so many interesting and neat angles to it that I thought might interest you as readers. Most of my cases are not this involved and don’t delve into the “weird areas” as much as this one, but if you are going to get to the bottom of things, sometimes you just have to attend to what comes up!

What’s New on the Website? Our website is working quite well and now has 310 pages and counting. The End of Year statistics show that it has had over 3 million hits this year. I like it. I first put up the bare bones site in April of 2005! I must be doing something right. The newsletter subscribers are at almost 400 and the sign-up rate has doubled since about 2 months ago. I don’t know if it’s because of the free report they get when they sign up, or the Ezine articles I have been writing for EzineArticles.com, but I’m not complaining.
In December I did consults for people in Germany, London, and Fuji. Isn’t that weird? Two were email consults and the London client called. I have a map on the wall that I put a pin in for each new state and city that I have a client in. Guess I better get a world map! AND, I finally got my merchant account up and working so I can take credit cards now. (Only Visa and MasterCard, but it’s a start.)
I’ve been getting lots of requests to exchange links with people that I have no idea of the quality of their work, so I built a special page for those links. Answer: Thanks for touching base. I’m testing that you are experiencing what is called a healing crisis because we are trying to build new good gut flora. Is it uncomfortable or can you push past it with eating extra yogurt or using it as a vaginal suppository (plain yogurt of course!) You could also back way off of any carbs, take some Myrrh Gum Powder for a few days, take a bath in Epsom salts. Or, just take a rest from everything for a day or two and then restart the program. It’s totally up to you. I never had quite the patience to back off. I wanted to be fixed as soon as humanely possible, but I’m not everybody. We can work through this together. What would you feel comfortable doing? Denice

Question: Hello Dr. Moffat, I was browsing your website and was very impressed. I particularly enjoyed much of the “law of attraction” column. I realize that there are tons of books, seminars, groups, etc. . .available by many different authors and lecturers who also have many different levels of seminars and books. You get the picture. So, I would like to know, if you had to recommend three books or 3 CD’s that you believe is a MUST HAVE for anyone who wants to apply the “law of attraction” in their own lives, what would they be? Answer: Hmmm. . . Favorite prosperity books:
- The Law of Attraction by Esther and Jerry Hicks (a channeled work of a group of entities who call themselves Abraham)
- Open your Mind to Prosperity by Catherine Ponder (my very favorite)
- Creating Money: Keys to Abundance by Sanaya Roman and Duane Packer (a favorite of mine because it has no numbers in it!)
- Your Life: Understanding the Universal Laws by Bruce McArthur
- Any CD’s by Esther Hicks and Abraham (awesome stuff) and
- Jack Boland tapes on Prosperity Principles that work (another favorite)
I suspect that when you master those and you will master the Law of Attraction! Let me know how it goes and thanks for asking.
So, Peter, do you have Robert Kiyosaki’s, Cash Flow Game? That really helped us understand how to spend and invest money. It’s a spendy game (we bought our copy for about $300), but each time you play it with someone, you REALLY get an insight into how others think about how they spend money, and it really opens up your senses to flow and getting into that stream of consciousness.
And if you’re game, play the prosperity game. You get a virtual check each day for about 30 days. Each day the amount doubles and you have to “spend” the money each day–on yourself. It really blows your mind and helps you grow. I will be asking if anyone wants to play in my January newsletter. It’s always fun to play with others. I have a page in the prosperity corner about the game. I play it every other year or so.

Question: Is it safe to use infrared saunas if you have titanium metal bone or dental implants? Also is it safe to use an Infrared Sauna with porcelain or zirconium crowns? And do you know of the safety of titanium implants? Is titanium harmful to have in one’s body? Thank you SO much!!
Answer: Yes, it’s safe to use a far infrared sauna with these types of implants. (I’ve never heard of anyone telling us we have to stay out of the sunshine because we have crowns!) Infrared rays are similar to sunshine rays. Very penetrating. If your mouth gets too hot, then step out of the sauna. Make sense? As for the safety of titanium bone implants; a few years ago they coated the implants with a spray that some hospitals forgot to scrub off before they sterilized the implants for surgery. Many people reacted to the spray and had to have the implants removed. I remember there was quite the “to do” about that and many lawsuits. I’ve never heard or read anything saying that the body rejected the titanium itself and those companies no longer use the spray on the outside of the apparatus.
People who have implants can feel it when the weather gets colder because the metal is conductive. I would assume it would be the same way for heat. If you listen to your body, it will tell you when the environment is too hot whether you are in the sunshine or in the sauna. Listen to your body and you’ll be fine. Denice
Question: I am a nursing student doing clinicals and have a patient with lab results showing the following: Hemolysis 1+ * Reference range: No Hemolysis
I have looked through my lab and diagnostic test textbook, the internet, and a few other sources, but have found little explanation other than hemolysis is the lysis or destruction of erythrocytes (red blood cells). I would like to know more about the meaning of these results and am frustrated that I keep coming up empty. If you could shed some light on this, I would greatly appreciate it. Thank you. Teresa
Answer: Yes, hemolysis is when the red cells have ruptured. Quite common with beginning phlebotomists as they sometimes suck the blood up too fast into the syringe while taking your sample (unless you are using those self-filling vials). So, when the vial is mishandled, shaken, heated, or the cells are more fragile than they should be, they break causing red coloring in the serum and plasma. Then, when the spectrophotometer machine reads the blood for the various tests, you can have some false readings. (Certain tests can read abnormally high—a false reading.) I can’t remember which tests can be affected by hemolysis, but I do have them listed on the Lab Test Result Meaning page. (You’d just have to read all the “too high” rule outs for a chemistry panel to find those.) Does that help? That’s all I know. I used to get so aggravated when the courier would pick up my blood samples as the sample would get a ride to the airport where it was shaken in the long car ride and with the turbulence on the plane before ending up in Boise where the tests were done giving me results that were not useful. Seemed rather useless to do blood tests! Of course, I should look at it as a blessing because it was just one of those things that pushed me more into alternative medicine! Good luck! Denice
Product of the Month: Rosemary
Now that I’ve reviewed my notes on rosemary, I can see why so many people are muscle-testing that they need it for the winter season! It really tastes great in soups and stews. Michael and I have been using quite a bit of it these last few months. I think I’ll make a garland out of it next summer. You’ll see why. Enjoy.
History: Native to the Mediterranean, rosemary grows freely in much of southern Europe and is now cultivated around the world. Rosemary (Rosmarinus officinalis) is an aromatic evergreen bush with silvery green leaves and pale blue flowers. It still is burned in the homes of students living in Greece who are about to take exams. Greek scholars used to wear rosemary garlands in their hair during exam times to improve memory and concentration. Rosemary is used as a symbol of friendship, loyalty and remembrance and is traditionally carried by mourners at funerals and by the bride at her wedding. We plant rosemary around the perimeter of our property to “ward off negative spirits” (we think it really works!)
Rosemary is a warming herb containing volatile oils such as camphor, flavonoids (even stronger than rutin), tannins, rosemarinic acid (a mild analgesic), diterpenes and rosmaricine.
Rosemary is propagated by seeds (early spring) or cuttings (mid summer after blooming) preferring warm, moderately dry and sheltered climates. Rosemary grows well in containers and is easily trained into topiary. Prune after flowering to promote bushy growth. Plants can be stored in green houses or inside during the winter in climates that freeze. Make sure there is enough air circulation to prevent mildew from growing on the plant.
Historical Uses for Rosemary:
- Acne and eczema
- Aids in recovery from long-term stress and chronic illness by supporting adrenal function
- Analgesic—because of this it can be used in the place of aspirin
- Antifungal
- Anti-inflammatory (it can be added to oils and lotions to help aching and rheumatism)
- Antiseptic—kills many different bacteria
- Astringent—good for fluid retention
- Carminative—soothes the gut
- Constipation
- Depression (mild to moderate)
- Diaphoretic (causes sweating)
- Digestive complaints including indigestion, colic, nausea, and gas
- Digestive problems associated with anxiety
- Eases headaches and migraines
- Encourages hair growth by improving circulation to the scalp (the essential oil is included in many natural hair conditioners)
- Epilepsy
- Failure to Thrive syndrome caused from stress
- Fever
- Improves concentration and mental clarity
- Lice
- Menstrual cramps (calms the muscles and reduces muscle spasm)
- Mental exhaustion
- Mucolytic (helps move mucous associated with colds/flu)
- Nervine—Rosemary contains lots of bioavailable calcium which calms the nerves
- Raises low blood pressure (used for fainting and weakness associated with poor circulation)
- Raises the spirits
- Relaxes spasms
- Skin toner
- Stimulates blood flow to the brain so is good for memory, epileptics, and people who suffer from migraines
- Stimulates liver and gallbladder to improve digestion
- Strengthens capillaries
- Strengthens memory!
- Tonic
- Toxic Shock Syndrome
- Used as a symbol of fidelity between lovers so it is often put in the bridal bouquet
- Used to flavor meats, soups, stews, sauces, salad dressings, breads and some jams.
- Vertigo
Harvesting and Care of Rosemary:
Branches are harvested after flowering and dried in the shade. The dried needles (leaves) are picked off and used in cooking and in making teas and infusions. Fresh plants are used for making essential oils. We carry the Starwest Botanical organic essential oil which can be used internally as well as externally, but you can find it under other brand names as well. The cost is about $4.10 for a 1/3 ounce bottle (about the cost of a couple of baby plants.)
To make rosemary tea add ½ ounce fresh rosemary to a pint of boiling water, steep in a covered container for 10 minutes and drink or use the cooled tea in hair rinses.
Rosemary tincture (also called Hungary water) is made by macerating rosemary tops and letting them soak in alcohol for about a month.
Rosemary essential oil is added to lotions, carrier oils (such as peanut, castor or olive) is used externally for rheumatism, arthritis, neuralgia, muscular injuries, wounds, and dandruff. Peanut oil is especially healing for joints and castor oil draws out toxins from the system—both great choices for arthritis.
Precautions and Contraindications: Excess rosemary is not safe for pregnant women (may cause abortion in the first three months of pregnancy because it is too stimulating) and for those with high blood pressure. Using it in normal amounts in recipes should be fine unless you have an allergy to it (which I’ve never heard of yet.) Using too much over an extended period of time, it may cause convulsions in people who are prone to them (small amounts stimulate the circulation and help some epileptics).
Best not used before bedtime as it may keep one awake.
Media Reviews: (Movie) The Ron Clark Story
“He believed in them when no one else would” is the tag line to The Ron Clark Story (Ron portrayed by Mathew Perry © 2006 https://www.ronclarkacademy.com/curriculum.aspx). Inspired to leave his small North Carolina hometown to teach in one of New York City’s public schools in Harlem, Disney’s 2000 Teacher of the Year, Ron Clark, uses his enthusiasm, creativity and passion to reach his toughest students.
The Ron Clark Story is the true account of this innovative teacher, who strives to tap into his students’ potential, talents and abilities, gaining their respect and ultimately raising their test scores to the highest level in the school. I was really inspired to know that there are teachers like Ron Clark out there making a difference in our world with his “out of the box thinking.” I love the fact that he has focused on touching the lives of children in the high-risk dropout areas. He uses innovative teaching techniques and has 55 rules. (“The Essential 55,” describes the 55 rules and expectations he had of his students in Harlem and how he used manners and respect to help his classes achieve outstanding test scores.) With the proceeds from this book he purchased land to build an Academy where he can teach both students and educators using his methods.
Sometimes I believe that kids just need someone to believe in them no matter what. I remember when Michael and I first came to Moscow, Idaho three years ago. I was just building my practice up (again) but still had to pay the bills, so I did some garden work for a couple and also took on a job as a substitute teacher in the local schools. Since I didn’t have my teaching credential, I was only able to teach in the classes that contained “mentally challenged” and “slow” students.
One morning, when I was in a local grade school, the teacher had me tutoring a little Native American girl. I introduced myself and told her that I was also part Indian and shared a little about how it had changed my life for the better. We then worked on addition and subtraction exercises. I finally said to her, “I don’t get it. This seems to be really easy for you. Why are you in the slow class?” “I don’t know.” She said shyly. Because she seemed bored, we pushed onto the next unit with the time we had left (which she also did quite well with.) We ended up the next hour by doing a timed reading test. I thought she did great and told her so.
After the class was over the teacher called me back to her desk. She wanted to make sure I had done the reading test correctly (I had) and sat there in silence for a minute before asking, “How was it that she read 2 ½ times faster for you than she has ever read or me or anyone else?” I shrugged my shoulders. (I was thinking, “Because I didn’t label her as slow or stupid and allowed her to believe in herself?)

Two other must-see movies we really enjoyed this month are An Inconvenient Truth (the movie about global warming) and Christmas in the Clouds (filmed at Robert Redford’s resort).
Tips and Tricks for a Healthier Life
Gastrointestinal and respiratory crud: Hmm. . .Seems like this month I am seeing gobs of gastrointestinal and sore throat symptoms. Nausea, vomiting, coughing. . . It is testing out as Shigella (gut crud), and some type of Streptococcus (respiratory crud) in our neck of the woods (the United States). So, here’s what’s working for most people:
- More electrolytes: fluids, chicken soup, mineral water—we use liquid minerals and vitamins for better absorption. Some people are using the new product called Airborne for the electrolytes and it seems to be helping.
- Rosemary: For some reason people keep testing they need this herb specifically—in capsule, tea or soup form, it doesn’t matter. I’ve been telling people that even if you use canned chicken noodle soup, Lipton’s dehydrated chicken noodle soup (which does not contain MSG) or make your own chicken soup, add additional parsley, sage, rosemary and thyme. All these herbs are antiviral, antibacterial, antifungal and have lots of minerals and a full complement of cell salts in them. I add a dash of Irish moss powder as well, but that is difficult for most of you to find unless you have an awesome herb store.
- Viral Immune System Stimulator Drops and Bacterial System Stimulator Drops: Most of my clients have one or both of these homeopathic drops. What’s working for us is to take a dropper (about 17 drops) of each twice a day either under your tongue or in water for exposure, and up to three days after the symptoms stop.
- Ipecac homeopathic tabs (30x strength) to control the nausea or vomiting—3-7 tabs under the tongue daily as needed until these symptoms stop. You can get the Hyland’s brand at your local health food store.
- Immune Stim Herbs: Many of you have these for various immune challenges. The dose right now is two per day for the next 2-3 weeks. This is a combination of herbs that I was guided to make up many, many years ago to fortify the immune system. The formula contains: Alfalfa, Astragalus, Black Walnut Hull, Burdock Root, Chaparral, Echinacea, Goldenseal, Irish Moss, Red Clover and Wormwood in equal portions. (Ooops—so much for my “secret formula” that seems to work great!)
- Remember to eat your raw fruits and veggies. It’s cold out so many of us have not been eating these foods—because they are cold! Our immune systems are suffering from that and all the holiday stress and extra sugar.
- Cut back on sugar: Each time you eat sugar it suppresses your immune system for about six hours. Alcohol also suppresses your immune system because the liver has to work overtime to help remove it from your system.
- Ester C: Ester C is easier on the stomach and has a full complement of molecules to make up the total vitamin C molecule—500mg/day is what is needed (or the juice of two fresh oranges). About half my clients seem to need this.
- Lemons: The juice of one whole lemon once daily for 2-3 days has been helping to break fevers. It helps to flush the system and fry the bacteria, plus it’s alkalizing. Drink it straight or diluted, it doesn’t matter as long as it’s fresh and not that concentrated stuff off the shelf or out of the freezer section.
- Wash your hands regularly and remember to clean the phones and door handles.

Question: I’m interested in keeping toxins off my dog and would like a natural tip for flea protection. I was wondering how much Brewer’s yeast I should give him to prevent flea infestation during the winter months. Regina
Answer: Brewers yeast is good, but if your dog already has a flea problem and your house is infested you will need more help than Brewer’s yeast. Please read the flea control handout.
Most animals will monitor and control the amount of yeast they need. Try putting a quarter cup of Brewer’s or nutritional yeast in a small dish and leave it on the floor in their feeding area. Replace this amount every day (especially if they are eating all of it daily). When they stop eating all of it, you can fill the dish and leave it there and they will lick up what they need each day.
Why not fill the bowl from day one? Because if they overeat initially, you will see your pet get diarrhea as the bowels have to adjust and shift gut flora. It’s like changing any diet abruptly (like when you run out of their normal diet and decide to change to a different product or they get into the garbage and pig out on something they don’t normally eat.)
Mild flea problems often respond well to natural means of control, but if you have a moderate to massive infestation, you most likely will need to add some temporary toxins. Sorry about that! Denice
Healthy Recipes: Cornish Game Hens Stuffed with Moroccan Dressing
This recipe was given to me by a client of mine who invited me to lunch one day many years ago. When Michael and I took my brother and sister-in-law out to dinner last time we were in the Seattle area, we went to a Moroccan restaurant. It was very interesting. We had to eat everything with our bare hands after first washing them with warm, soapy water then drying them with a warm towel—both supplied by the waiter. They started the meal out with the stuffing from this recipe wrapped in filo dough. My sister-in-law fell in love with the dish, so I’m including it for her in this month’s newsletter.
Cornish Game Hens Stuffed with Moroccan Dressing
- 1 cups fresh or canned Chicken Stock or Broth
- ½ cup coarse-ground Bulgur Wheat (also called Cracked Wheat or Ala)
- ½ teaspoon Celtic Sea Salt (more to taste if necessary)
- ¼ cup ground Almonds, toasted
- 1 ½ tablespoon Olive Oil
- 1 cup finely chopped Yellow Onion
- 1 tablespoon chopped fresh Parsley
- ¼ teaspoon ground Cinnamon
- Freshly ground Black Pepper to taste
- 2 (1 ¾ pound) Cornish Game Hens, thawed
Combine the chicken stock, bulgur wheat and salt in a small saucepan and bring to a boil. Cover and simmer gently for 10 minutes. Remove from heat and allow to cool uncovered, so the bulgur absorbs all the liquid.
Heat a small frying pan and toast the almonds over low heat until brown. Remove the almonds and let cool on a plate.
Heat the frying pan again and add the oil and onion. Sauté until tender. Place the cooled bulgur in a bowl and add the almonds and onion. Add the remaining ingredients to the onions and mix well.
Stuff the birds with the bulgur mixture and tie the legs together with kitchen string. Tuck the wings under the hens and season with salt and pepper to taste. Yes, they look like little turkeys and are really cute. Place on a rack in a roasting pan and roast in a preheated 375°F oven for 1 hour and 15 minutes.
Allow hens to rest for 5 minutes before serving. Serves 2-4.

Hi Dr. D, I’m not having the headaches that I was. We’re all dewormed and that feels good. Denice’s Note: Kari came to me the beginning of last year for infertility problems. I think the thing that helped her and her husband most was to do the emotional clearing necessary to make way for the pregnancy. Even though they both wanted a child very much, they each had deep subconscious fears on different topics (first time parenting, work advancement, lack of job security, moving to a larger house, money, health challenges, grandparent issues, etc) that were holding them back. Looks like those fears have been fully worked through! I was very proud that Kari’s husband was open to that. Husbands do not usually want much to do with that process in most of my fertility cases.
Thanks for the story about White Oak Bark and periodontal disease. I’ve had gum surgery again and again, but needed to deal with the problem in a more effective way. I tried the White Oak Bark by just leaving it in my mouth all the time whenever possible and the results are extraordinary. I can see the problem is clearing up, and it was bad to begin with. The White Oak Bark is allowing for a natural healing process that shows how the disease ‘recedes.’ The bad site, at the very back where a wisdom tooth used to be, was quite congested with a long-term, low grade infection that was not always apparent. One day I was on my way to church to give an inspirational talk and sing a few songs. Having received a license in the mail a few weeks back that claimed I was now an officially ordained minister, I was excited to be giving my first legal sermon. (I had been an outlaw for many years before going straight.)
Driving in my car, I noticed what appeared to be a speck of dirt on my clean white pants. When I went to brush it off, somehow it smeared into a dark streak of oil. I looked down at my lap and as is the custom of spiritually advanced souls such as myself, trained in mystical Christianity, I immediately called on Jesus. “Christ Almighty!” I fumed, venting my exasperation, “How am I going to stand in front of the congregation with my pants smeared like this?!” My frustrations turned from Jesus towards myself, and a critical voice inside me began a smear campaign of his own. “Scott, how stupid of you not to be more careful. When are you going to learn how to pay attention and stop being such a klutz! What are you going to do now? You can’t go to church looking like this!”
The inner critic continued his clothes-minded sermon for a few more moments until a kinder and wiser voice took a turn at the pulpit. “Scott, let’s take a breath and remember what’s really important. You’re on the way to church to express light and love. What do you want to focus on, the stain on your pants or the love in your heart? You’ll be there in ten minutes. Do you really want to spend it beating yourself up?” I took a breath, re-established my priorities, and dropped the self-criticism. I dropped it just like that, without affirmations, therapy, meditation, colonics, or psychic surgery. I spent those ten minutes in peace, enjoying the drive and reflecting on the ease of my attitudinal adjustment.

What’s New at Our House?
December has historically been slow for me the week before and after Christmas, so Michael and I spent some time in the basement (I affectionately call it the dungeon) tidying up. We were trying to consolidate and shift one side of our stuff to the other in preparation of building a small feline surgical suite down there so that I can do some cat spays/neuters a few Saturdays each month. My goal is to take the profits from this extra job and put it toward the mortgage on our house as that would make me feel more secure. It’s a good goal.
Well, there was a big old pile of laminate flooring on the side we were trying to organize, so I thought: “Why not use the time right now to lay our living room floor? That shouldn’t take long and then we can open up that space.” We had also ordered a new couch two month’s before which should have been here by now (my first new couch ever and I’m almost 50 years old, so I was pretty excited.) A new floor would look awfully nice under that new couch.
So, I started ripping up ugly blue carpeting and padding only to find some 1920’s asbestos linoleum. And it wasn’t in one piece at that. To make the floor level, I’d have to put some sub flooring in. “Gee, this project is getting bigger and more expensive by the hour” I said to Michael as he was working at his desk but really wanting to help me (I had just decided to do the floors without discussing it with him and he was busy!)
The 3-hour glueless floating laminate floor job ended up taking about six 8-hour man/woman days. I think the person who estimated the time while writing the Time/Life book series must have been on the original crew of the SS Minnow on Gilligan’s Island. Obviously they did not really know how long it took to put in a floor! Anyway, Michael was called to substitute at work for two days and I ended up bent over and on my knees for several days.
Let me tell you, the directions on the box are sorely lacking for what do to around thresholds and walls that have angles and corners! We haven’t finished the threshold areas yet, but have expensive little pieces on order. My back is just now recovering, but the floor looks great and I got to learn how to use a couple of really neat tools—the cordless rotary saw is now one of my favorite tools. I highly recommend a new blade for your saw as well when you start a project like this. I ended up having two totally booked days at the end of that week as well so I felt we had an awesomely productive week and also made enough money to pay the bills. I’m excited.
Once the floor was done, of course we were ready for the couch. Hmm. They must make couches bigger these days as we had a time of it getting it though the front door. The door jam kind of got bashed up and we did have a mishap with a tail light backing up (tail lights are REALLY tough and snap really loud when they are broken these days) but we forced that sucker through the opening instead of returning it! It sure does take up a bunch of space, and it sure is nice to be able to sit down with my darling husband for the first time ever on our own couch to watch a movie together and not have to hold hands over the top of an end table. We celebrated by watching White Christmas with Bing Crosby.
We took a break for Christmas and will complete the floor in Michael’s office this next weekend. We think we’ll continue the same flooring into the kitchen (after we find it on sale again). Hundred year old houses take a bit of upkeep!
